Get to the market this Saturday and pick up some chicken or pork for this tasty, spicy rub. You can find a variety of meats at the market and in general they will taste better and be healthier for you. No matter what you choose, this rub is an easy way to add tons of flavor to your BBQ fare.
2 Tablespoons garlic powder
2 Teaspoons onion powder
1 Teaspoon mustard powder
1 Teaspoon black pepper
1 Teaspoon chipotle chili powder
½ Teaspoon cayenne pepper (add more or less depending on your preference)
Salt to taste
1. Mix all ingredients in a bowl or jar.
2. Coat both sides of the chicken or pork and rub the mixture into the meat with the back of a spoon.
3. Whether grilling, pan frying or baking the meat, cook for 10-15 minutes before adding any BBQ sauce. This will create a nice crust and more interesting texture.
4. When adding BBQ sauce, brush on with a basting brush one side at a time, cooking for a few minutes between coats in order to create a glaze on the meat.
